Goat Cheese Pasta (3-4 servings)

This is a great summertime recipe because the only cooking it requires is boiling pasta. It's simple, quick, and satisfying, and it won't heat up your kitchen. It's adapted from a recipe on Epicurious.

You will need:

  • 1/2 lb of dried pasta (I used medium shells)

  • 1 pint of cherry or grape tomatoes

  • 2-3 oz soft mild goat cheese

  • 1 roasted red pepper (I used one from a jar)

  • 1 Tbsp julienned fresh basil leaves

  • 1/2 Tbsp minced fresh chives

  • 1 tsp dried oregano

Steps:

  1. Start water boiling for pasta, and then cook according to package directions.

  2. While pasta water is warming up, rinse the tomatoes and cut them in half. Place the tomatoes in a large bowl and salt to taste to bring out the juices.

  3. Dice the red pepper and add to tomatoes. Add herbs and crumble goat cheese on top.

  4. When pasta has cooked, drain it thoroughly and pour it over the tomato mixture. Use a big spoon to mix everything together.

The heat from the pasta melts the goat cheese into a creamy sauce, enhanced by the herbs. Enjoy this pasta dish with a green salad for an easy summertime supper!
