Welcome to my food blog!

Welcome to Mainly Veggie, a project idea that's been floating around in my head for some time now.  I'm glad I finally found time to create it!  

 I stopped eating meat during college for health reasons, but now that I've read more about vegetarianism and food politics, I understand the economic and environmental benefits of cutting out meat.  Inspired by writers like Michael Pollan and Barbara Kingsolver, I'm trying to eat and cook with local ingredients when they're in season.  

I plan to use this blog to post recipes I enjoy making and that I hope will inspire others.  I make up some of my recipes on my own, but most of them are modified from other sources.  Whenever possible, I will credit these sources, and if I can't remember where I found the recipe, I'll take my best guess!  I'll also post photos of the recipes whenever I can.  My goal for this blog is to show people that it isn't hard to be vegetarian or to cook responsibly.  Words like "green" and "organic" are thrown around so liberally these days that the whole lifestyle can seem overwhelming, pretentious, and shallow.  But I want to show people that little changes can make a measurable difference -- in our health, our environment, and our collective priorities.

So please enjoy the recipes, and feel free to leave feedback or to ask questions.  Once I get a feel for this thing, I may bring in some guest cooks and bloggers to contribute.  Look around and enjoy!
